 It's turkey brining season! This is my favorite brine. I use it every year, even when I fry the turkey.

The purpose of brining a turkey is to enhance its flavor, tenderness, and juiciness. Brining involves soaking the bird in a saltwater solution, sometimes with added sugar, herbs, or spices, for several hours or overnight. The salt helps the meat absorb moisture through osmosis, ensuring it stays moist even after roasting. It also breaks down some of the turkey’s muscle proteins, resulting in a more tender texture. As the turkey cooks, the extra moisture retained from the brine minimizes dryness—especially in the breast meat. A good brine can also infuse subtle flavors throughout the bird, resulting in a more seasoned taste both inside and out. Whether wet or dry, brining helps deliver a flavorful, juicy, and evenly cooked bird.
